Quiche Lorraine
1 9” pie pastry
6 slices of bacon
1 small onion
1 cup grated cheeses
2 eggs
1 cup milk
Salt and pepper to taste
Fry bacon until crisp and crumbly. Add onion to bacon fat and cook until clear. Do not brown. Line pastry with bacon and sprinkle with onions. Layer on cheese
In a separate bowl, beat eggs. Add milk, salt and pepper. Pour carefully over cheese.
Bake in a 400-degree preheated oven for 5 minutes, then turn down to 350 and cook until quiche is firm to the touch in the center. Serve immediately.
This is a basic quiche. From this beginning, you can add whatever you like. We change it up quite often: fresh spinach, mushrooms, Canadian bacon, asparagus, shallots, ham, the list is endless! I have recently begun making mine without a crust. Just make sure to spray the dish well before baking.
