Chicken Casserole
2 cups Chicken, cooked and cut into pieces
2 cups Cooked Rice
2 small cans of Green Chilies and however many Jalapeños you want. (I don’t use any.)
1 cup Sour Cream
1 can of Cream of Chicken Soup
1/2 onion, sautéed
1&1/2 cups grated Swiss Cheese
1&1/2 cups grated Monterrey Jack Cheese
Using half of both cheeses, mix all ingredients in a bowl and spread evenly in a 9×13 casserole dish. Use the remaining cheeses to sprinkle on top. Bake at 400 degrees for about 30 minutes or until golden and bubbly.
