Here in the Ozarks, it is blueberry time! It has been proven that these luscious little fruits are so full of the nutrients we need daily that many health enthusiasts recommend having some every day! Here is one way to get part of your daily dosage of blueberries in a yummy muffin, fit for breakfast or midday snack! Enjoy plain, drizzled with honey, or spread with a pat of butter.
Blueberry Muffins with Streusel Topping
- 5 tbsp butter, melted
- 3/4 c all purpose flour
- 1/2 c brown sugar
- 2 tbsp granulated sugar
- 1/2 c dry oats
- 2 c all purpose flour
- 1/2 c granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- 2 tbsp butter, melted
- 1/4 c vegetable oil
- 1 egg, beaten
- 1 c buttermilk
- 2 1/2 c fresh blueberries

Preheat oven to 400 degrees.

Line a muffin tin with paper cups.

Mix the first five ingredients together in a small bowl and set aside.

In a large bowl, mix together the next five dry ingredients. (flour, sugar, baking powder, baking soda, and salt)

Add egg, oil, butter, and extracts to the dry mixture. Do NOT overmix.

Gently fold in the blueberries.

Spoon muffin mixture into the muffin cups and crumble streusel topping onto the top of each.

Bake muffins for approximately 25 minutes, depending upon your oven.

Cool for a few minutes and enjoy!
